Veggie-Tuna-Shrimp soup recipe

I love to cook. Dear Wife also loves to cook. Over time, her expertise has grown well in the dessert area while mine has extended in the main dish area. When we invite friends or colleagues at our place for dinner or a weekend-lunch, they cordially thank Dear Wife after the main dish. Guests realize something is wrong when Dear Wife starts beaming. Societal assumptions of females being in charge of cooking and males being in charge of consuming the food are becoming obsolete. Don’t you watch cooking TV shows? 🙂

Ingredients

Anyway, I am not going to discuss society here today. Rather, I will describe my dynamic recipe of Veggie-Tuna-Shrimp soup. The trick is in the words — dynamic recipe. The meaning of dynamic recipe is no actual recipe. It is a sort of apply-whatever-you-want within a reasonable choice recipe. However, you cannot call a soup Veggie-Tuna-Shrimp soup, unless there are at least vegetables, tuna fish, and shrimp in it. There you go. The main ingredients are vegetables, tuna fish, and shrimp.

Now, tuna fish is, you know, tuna fish. Shrimp is, as you know, shrimp… but the word vegetables is a bit vague. The dynamic part of the dynamic recipe relies a lot on the ingredient — vegetables. Whatever vegetables are available right at this moment in your stock should suffice. The soup in the pictures of this post contains (as far as I can recall): carrot, butternut squash, celery, onion, and tomatoes. I do not know if Thai Chili or Jalapeño is considered a vegetable. I used some Thai chili to make the soup a little hot. Jalapeño would do the same spicy-magic.

What spices did I use? This part is dynamic too. In my experience, no spices at all is fine for this soup. Sometimes I throw some ground black pepper. Paprika is good too. For a beautiful color, I sometimes mix one to two tablespoon of tomato ketchup with water and pour it on the soup in the middle of the cooking.

I use corn starch to thicken the soup a bit. I add one tablespoon of corn starch to a quarter cup of cold water. Just like the ketchup, pour the corn starch liquid on the boiling soup. Note that corn starch is generally mixed with cold water first before pouring the liquid on the boiling soup. Dear Wife found this instruction on the label of a corn starch can. I use corn starch as a thickener. It can be easily ignored in my dynamic recipe.

Of course, I must not forget salt. Kosher salt, pink salt, or regular sea-salt, any salt is fine. I generally do not use broth in this soup. If I decide to use a broth, I usually go with a vegetable broth. I am careful in giving additional salt if I use broth because the broth might already have some salt in it.

A very optional ingredient is the lime peel. Peel a little skin from fresh lime and chop it thinly. It gives a great lime flavor.

Another ingredient I like is cilantro. I through the chopped cilantro right before the cooking is complete. Or, apply the cilantro directly on the bowl right before serving. I generally do not use cilantro if I use the lime peel.

Process (sometimes called instructions)

The process is already described a bit with the ingredients. I chop the vegetables (if they are not already chopped). I put some olive oil (one to two tablespoon) in the cooking pot and let the heat reach the oil. I put the vegetables in the cooking pot, let them warm up for around five minutes. During this time I throw the spices (black pepper, paprika, salt) in the cooking pot.

I pour water (or vegetable broth) so that the water and vegetables are at the same level. Then I mix the ketchup with a cup of water and pour it. Then I mix the corn starch with cold water and pour it. After a few minutes, I add the tuna with the boiling soup. I use canned tuna. Then I add the shrimp, which is generally the already-cooked kind. 🙂

Then all I need is to wait. Depending on what vegetables I have added, it may take 15 minutes to half an hour. When I have plenty of time, I let the soup simmer for an hour. That makes the soup a little thicker and the vegetables melt inside the mouth like cotton candy. 🙂

Add the thinly chopped lime peel or the cilantro with the soup before serving.

Concluding remarks

I heard somewhere, it is not the ingredients that make the food unforgettable; it is the love that makes the food memorable. This is why mother’s cooking is always the best. I very much hope and enjoy to do enough so that Dear Son remembers his father’s cooking.

  1. Wow! The soup really looks delicious. Always appreciate taking time with family and sharing a very good recipe. Except I have allergies with shrimps other than that I am good to go with other seafoods. My eldest son loves eating soup dishes one that is healthy like vegetable and mixed seafood soup. Try it out too with all the very delicious seafood included. It really taste good. I highly recommend it.

  2. I have never eaten shrimp. I cannot stand the smell of tuna fish. I love vegetables and I love soup. However, this veggie tuna shrimp soup is not for me because I cannot find shrimp in the local market and I don’t like tuna. Maybe I should replace shrimp with prawn and tuna with trout, and add cabbage and tomato. cabbage and tomato are my favorite ingredients for vegetable soup.

  4. Wow! This soup looks yummy. I am a food lover and I love experimenting on foods. I sometimes cook out of my imagination, whatever food gave me the craving. This is an addition to my experiment. Someone told me about creamy pumpkin soup but I haven’t tried it yet. It sounds yummy though. The ingredients are squash (mashed), condensed milk, and butter. I would like to add mushrooms for this one. But now, I already have 2 pending soup experiments since you shared this recipe. I can imagine adding a bit of butter for that one as well.   5. This recipe is very easy to make because of your process or instructions you laid before our keenful eyes. Hehehe, anyways, your way of cooking is common here in our place. We call it adjustable cooking, in which you cook with no exact proprtion or amounts needed because the proportion depends on the taste. If it needs sweet more or saltiness more, it depends in our taste.

  9. Ooh, it looks absolutely yummy and I just wish I could have it now. Soup is good when one is a bit under the weather. And it might just release the tight chest from cough. A bit spicy would be perfect. I don’t like cooking as hubby cooks more and better 🙂 but I might just give this a try.
